Portuguese Brandy, also known as "aguardente," is a strong and clear alcoholic spirit that enjoys popularity in Portugal. While it shares characteristics with brandy due to its distillation process, it possesses distinct qualities that set it apart.

Production Process:

Selection and Fermentation:

Aguardente is primarily crafted from grape pomace, including grape skins, seeds, and stems left after winemaking. It's mostly produced with neutral white wine that has great acidity. Pomace is fermented to convert sugars into alcohol.

Distillation:

Fermented pomace is distilled, often in copper pot stills, to separate alcohol from water and other components. Multiple distillation runs may occur. The resulting high-alcohol distillate is diluted with water to reach desired alcohol levels.

Aging and Bottling:

Aguardente may be aged in oak barrels, enhancing flavor and aroma. This process can go from 2 years until many decades. After aging, the Aguardente is filtered and bottled for final distribution to the market.

Aguardente Bagaceira:

Made from grape pomace, offering a strong grape aroma and flavor.

Aguardente Velha:

Aged in oak barrels for years, gaining complexity and subtle nuances.
